CREAMY TUSCAN CHICKEN AND SPINACH SOUP 🍲🍗🌿
"Creamy comfort in every spoonful"
Serves 4–6
Ingredients
For the Soup:
500 g boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
2 tablespoons olive oil
2 tablespoons butter
1 medium onion, finely chopped
4 cup sun-dried tomatoes, drained and sliced
4 cups chicken broth
1 cup heavy cream
½ cup freshly grated Parmesan cheese
3 cups fresh baby spinach
1 teaspoon Italian seasoning
½ teaspoon dried oregano
½ teaspoon paprika
¼ teaspoon red pepper flakes
Salt and freshly ground black pepper, to taste
1 tablespoon fresh parsley, chopped
1 teaspoon fresh lemon juice
Instructions
1. Prepare the Chicken:
Season the chicken pieces with salt, black pepper, paprika, and Italian seasoning. Heat olive oil in a large pot over medium-high heat. Add the chicken and sear for 4–5 minutes, turning occasionally, until golden brown. The chicken does not need to be fully cooked at this stage. Remove and set aside.
2. Sauté the Aromatics:
In the same pot, melt the butter over medium heat. Add the chopped onion and cook for 3–4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.
3. Add the Tuscan Flavors:
Add the sliced sun-dried tomatoes, dried oregano, and red pepper flakes, if using. Stir gently for 1–2 minutes to release their fragrant flavors.
4. Simmer the Soup:
Pour in the chicken broth and stir, scraping up any flavorful browned bits from the bottom of the pot. Return the chicken to the pot. Bring to a gentle simmer and cook for 10–15 minutes, or until the chicken is fully cooked and tender.
5. Make It Creamy:
Reduce the heat to low and slowly stir in the heavy cream. Add the freshly grated Parmesan cheese and stir until melted and the broth becomes smooth and creamy. Avoid boiling the soup after adding the cream.
6. Add the Spinach:
Stir in the fresh baby spinach and allow it to wilt for 1–2 minutes. Taste and adjust the seasoning with salt and black pepper. Add a little lemon juice if you prefer a brighter flavor.
7. Garnish and Serve:
Sprinkle with fresh parsley and extra Parmesan cheese. Serve warm with crusty bread, garlic toast, or a side salad.
Tips for the Best Soup:
* Use freshly grated Parmesan for a smoother, richer flavor.
* For a thicker soup, simmer gently for a few extra minutes before adding the cream.
* Add sliced mushrooms for extra depth and flavor.
* For a heartier meal, stir in cooked pasta or small potatoes.
Creamy, comforting Tuscan-inspired soup; rich, flavorful, and filled with tender chicken and fresh greens...

¼ tsp ground turmeric
¼ tsp ground cinnamon
Salt and pepper, to taste
2 tbsp chopped fresh parsley or cilantro
For the pomegranate yogurt:
¾ cup plain Greek yogurt
2 tbsp pomegranate seeds
1 tbsp lemon juice
1 tbsp chopped fresh mint
1 small garlic clove, finely grated
Pinch of salt
For serving:
Extra pomegranate seeds
Fresh parsley or mint
Lemon wedges
A drizzle of olive oil
Instructions
1. Prepare the lamb chops:
Pat the lamb chops dry with paper towels. In a small bowl, combine olive oil, minced garlic, cumin, coriander, paprika, cinnamon, turmeric, black pepper, salt, and lemon juice.
Rub the spice mixture generously over both sides of the lamb chops. Let them marinate for at least 20 minutes at room temperature, or refrigerate for 1–2 hours for deeper flavor.
2. Cook the basmati rice:
Rinse the basmati rice under cold water until the water runs clear. Drain well.
Heat butter or olive oil in a saucepan over medium heat. Add the chopped onion and cook for 3–4 minutes until softened. Stir in the garlic, cumin, turmeric, and cinnamon, cooking for another 30 seconds until fragrant.
Add the rinsed rice and gently stir to coat the grains in the fragrant mixture.
Pour in the broth and season with salt and pepper. Bring to a boil, then reduce the heat to low. Cover and simmer for 12–15 minutes, or until the rice is tender and the liquid has been absorbed.
Remove from the heat and let it rest, covered, for 5–10 minutes. Fluff gently with a fork and stir in the fresh parsley or cilantro.
3. Sear the lamb chops:
Heat a large skillet or grill pan over medium-high heat. Add a little olive oil if needed.
Place the lamb chops in the hot pan without overcrowding. Sear for approximately 3–5 minutes per side, depending on their thickness and desired doneness.
For thicker chops, reduce the heat slightly and cook for a few additional minutes. Use a meat thermometer to check the center. For whole-muscle lamb, the USDA recommends a minimum internal temperature of 145°F (63°C), followed by a 3-minute rest.
Transfer the lamb chops to a plate and let them rest for 5 minutes before serving.
4. Make the pomegranate yogurt:
In a small bowl, combine Greek yogurt, pomegranate seeds, lemon juice, chopped mint, grated garlic, and a pinch of salt.
Stir gently until creamy. Keep chilled until ready to serve.
5. Assemble the dish:
Spoon the fragrant basmati rice onto a serving platter or individual plates.
Arrange the golden spiced lamb chops over the rice. Add generous dollops of pomegranate yogurt on the side or drizzle lightly over the dish.
Finish with fresh parsley, mint leaves, extra pomegranate seeds, and a squeeze of lemon.
Serving suggestion
Serve warm with a fresh cucumber salad, roasted vegetables, or grilled eggplant for a delicious and satisfying meal.
Tender, aromatic lamb, fluffy spiced rice, and cool, tangy pomegranate yogurt come together in a beautiful harmony of flavors....

HALLOWEEN MONSTER CHEESEBURGER SLIDERS !🎃🍔👻
"Cute, spooky, and irresistibly delicious"
Serves: 10
Ingredients
For the mini burgers:
500 g ground beef
10 mini sesame burger buns
10 slices cheddar cheese
1 small onion, finely chopped
2 garlic orcestershire sauce
1 tsp paprika
½ tsp black pepper
1 tsp salt, or to taste
1 tbsp olive oil
For the monster decorations:
10–20 green and black olives
10 small mozzarella balls or slices of cheese
1 red bell pepper, cut into thin triangular tongues
10 lettuce leaves
Toothpicks
For serving:
Ketchup
Fresh parsley or cilantro
Cherry tomatoes
A little chopped fresh rosemary or parsley
Instructions:
Prepare the beef patties:
In a bowl, combine the ground beef, chopped onion, minced garlic, Worcestershire sauce, paprika, black pepper, and salt. Mix gently until combined. Divide into 10 equal portions and shape into small patties slightly wider than the buns.
Cook the patties:
Heat olive oil in a skillet over medium-high heat. Cook the patties for approximately 3–4 minutes on each side, or until browned and cooked through. Cooking time will depend on their thickness.
Melt the cheese:
Place a slice of cheddar over each patty during the final minute of cooking. Cover the skillet briefly to help the cheese melt beautifully.
Prepare the monster eyes:
Slice the olives into thick rounds. Place a small mozzarella ball or piece of cheese in the center of each olive slice, then add a tiny piece of black olive for the pupil. Secure two eyes onto each top bun using toothpicks.
Make the cheese fangs:
Cut cheddar cheese into small triangles. Arrange two or three triangles along the front edge of each melted cheese slice, allowing them to hang slightly over the patty like monster teeth.
Add the tongues:
Cut the red bell pepper into long triangular strips. Place one piece beneath the front edge of each patty, letting it extend outward like a little monster tongue.
Assemble the sliders:
Lightly toast the buns if desired. Place lettuce on the bottom bun, followed by the cheesy beef patty. Add the red pepper tongue and carefully place the decorated top bun over it.
Create the spooky presentation:
Arrange the monster sliders on a serving platter. Add fresh parsley, cherry tomatoes, and small dollops or swirls of ketchup around the burgers.
Serve warm while the cheese is soft and gooey. These little monster burgers are a deliciously fun way to bring a little Halloween magic to your table...

For the guacamole topping:
2 ripe avocados
1 small tomato, finely diced
1 tbsp lime juice
1 tbsp chopped fresh coriander
¼ tsp garlic powder
Salt and black pepper, to taste
Instructions:
Preheat the oven to 180°C (350°F). Line a baking tray with parchment paper.
Using a round cutter or the rim of a glass, cut the tortillas into round shapes.
Cut each round into two pieces: a larger semicircle for the brim and a smaller piece for the pointed crown.
Roll the smaller piece into a cone shape and secure the edge with a little melted cheese or a toothpick. Place the cone upright in the centre of the larger tortilla piece to create a witch's hat.
Brush the tortilla hats lightly with olive oil. Sprinkle with paprika, garlic powder, and salt.
Bake for 8–12 minutes, until crisp and lightly golden. Keep an eye on them to prevent burning. Allow to cool slightly.
To make the guacamole, mash the avocados in a bowl. Add the diced tomato, lime juice, coriander, garlic powder, salt, and pepper. Mix until creamy but slightly chunky.
Spoon a small amount of guacamole onto each tortilla brim and gently position the pointed tortilla cone on top.
Wrap a thin strip of cheddar cheese around the base of each cone to create the witch's hatband. Add a small piece of black olive to make a buckle.
Arrange the finished witch's hats on a serving platter, garnish with fresh coriander, and serve immediately.
Enjoy! 🎃🧙♀️

GOLDEN HERB-CRUSTED SALMON WITH LEMON & FRESH DILL 🍋🌿🐟
"Fresh, flavourful, and beautifully golden"
Serves: 4
Ingredients:
1 large salmon fillet (about 700–900 g)
2 tbsp olive oil
3 tbsp melted butter
3 garlic cloves, minced
½ cup breadcrumbs or panko
3 tbsp fresh dill, fineparsley, chopped
Zest of 1 lemon
2 tbsp lemon juice
1 tsp Dijon mustard
Salt and black pepper, to taste
Lemon slices, for serving
Instructions:
* Preheat the oven to 200°C (400°F). Line a baking tray with parchment paper and lightly brush with olive oil.
* Pat the salmon dry with paper towels. Place it skin-side down on the prepared tray. Season with salt and freshly ground black pepper.
* In a small bowl, combine the melted butter, olive oil, minced garlic, lemon zest, lemon juice, Dijon mustard, fresh dill, parsley, and breadcrumbs. Mix until the ingredients form a fragrant, slightly moist herb crust.
* Spread the herb mixture evenly over the top of the salmon, gently pressing it down so it adheres.
* Bake for 15–20 minutes, depending on the thickness of the fillet, until the salmon flakes easily with a fork and the crust is golden. For extra colour, broil for the final 1–2 minutes, watching carefully.
* Remove from the oven and allow the salmon to rest for 3–5 minutes. Garnish with fresh dill and lemon slices.
Serving Suggestion:
Serve warm with roasted baby potatoes, steamed asparagus, or a fresh garden salad. A drizzle of lemon butter sauce makes it even more delicious!
