Major development. Albumin proteins have emerged time & again in technoeconomic analyses as a major cost driver for CM. Sourcing alternatives from plants (even better from ag sidestreams!) is 💯. The future of meat lives at the intersection of plant-based, fermentation, & CM.
Out in @biomaterials now! Ag byproducts (rapeseed proteins leftover from canola oil production) can replace albumin in serum-free media for cultured meat, without much fuss.
