So what’s was the total actual cost of this meal? $96/plate. The $24 figure is raw cost. Multiply By 4, and you get 96. Why? Well, the extra costs that aren’t factored in to the base, plus trying to keep a margin (which, on this meal, was 8.24% after operating profit deductions) meaning we charged $20,832 and kept AS PROFIT $1,716.56. And thats not bad right now.
